I believe that the more you know about nutrition, meal preparation, and how your own mind and body function, the more inspired you'll be to do whatever it takes to nourish yourself and live your healthiest life. It's much more empowering when you know the reasons behind the healthy choices you are making—and you're not simply following advice because an "expert" said it was good for you!
For example, when you understand why and how certain foods are benefiting you—calming inflammation, balancing blood sugar, strengthening your heart, fighting off cancer cells, enhancing your brain, killing off viruses, detoxing your liver, clearing your skin, repairing your gut—healing becomes much more more powerful! Finally, I want to encourage you to exercise your power of choice. I don’t know about you, but when someone tells me that I can’t have something—I want it even more! What I’ve learned is that when I stop restricting myself with food, the rebellious eating goes away—because there are no rules to break! I now have a deep respect for and a healthy relationship with food and my body. I now treat both food and my body in a more forgiving, flexible, and loving way.

Wellness is cumulative—and so is disease. Disease doesn’t happen overnight. Our habits and the foods we choose to eat on a daily basis impact every aspect of our lives—how we feel, how we act, how we live, and how we age—not only now, but in the future. We may think we’re getting away with unhealthy eating habits simply because we don’t see or feel any immediate negative effects. But like the little raindrop on the roof, over time, these harmful daily habits can eventually cause severe damage.
